The only person I have ever met who doesn’t like carrots is my SO. Well, and my best friend from high school, but that’s because she has a weird allergic reaction to them. I haven’t eaten carrots in dishes in almost 3 years because my SO detests them as much as I detest bell peppers. I can respect that much hate, but it does make me miss carrots, especially in curries and such!
The school I’m currently working at is in the middle of a food desert. There isn’t even a 7-11 or Plaid Pantry near by. This means that I absolutely must plan ahead these days and make sure that I have food with me. While my SO won’t allow me to cook with carrots (as I won’t allow him to cook with bell peppers) for dinner, I can use this amazing recipe for snacks at lunch.
Honestly, I’m not sure how I function on an elementary school schedule. I’m used to eating about once every 90 minutes or so. They’re small, healthy snacks, but I just know my body well enough to know that I need to eat that constantly in order to be the best I can possibly be. Eating in a school setting? Once! That’s what I get. I can eat only once! It is driving me nuts. If you’re like me and like to eat small portions throughout the day, these carrots make a delicious and filling snack. If you’re on the same once/day schedule that I am now on, these also are great for your 30-minute break. They’re healthy and tasty!
