Kale salads are one of my favorite meals in the summer. My SO isn’t a salad person at all, but I do love a good salad on a hot day. They’re easy, and they often require no heat.
Fresh, crisp, light, and healthy! I love that in the summertime.
Peaches are a surprisingly good source of calcium. I had no idea, but it is the new thing I have learned for the day. All three ingredients, kale, blueberries, and peaches are high in dietary fiber. While this isn’t great for people with conditions like Crohn’s Disease, many of us are actually short on our fiber intake. This peach and blueberry kale salad can definitely up that intake and help some of us reach those daily requirements.
