Our love for mushrooms in this household knows no bounds. People who come over to eat are always warned that mushrooms are non negotiable. Don’t like them? We should go out to eat then. I can only think of like maybe two dishes that I make where mushrooms aren’t extremely present. Stuffed mushrooms aren’t usually our go to just because they’re so time consuming, but man! They do make a great meal sometimes!
I like this recipe because it is very customizable, but I’ve, again, made it a bit healthier. I use chicken sausages instead of pork. This recipe is also very easily adapted to be allergen free. Use gluten free breadcrumbs instead of regular breadcrumbs, and it becomes celiac friendly! Take out the cheese, and it becomes dairy free as well, and they taste just as good with those substitutions.
